Shrimp & Scallops Alfredo with Zoodles
This is one of my favorite low carb meals that really fills you up! Shrimp & scallops Alfredo with zoodles instead of pasta! What are zoodles, you might be wondering? Zoodles are zucchini cut into noodle form. You can buy them frozen or use a zoodle cutter to make them fresh. I do have one and have made them both ways and both still taste amazing! I’ve included the recipe & directions below, if you’d love to try this recipe on your own!
Serving size for 2-3 (double or triple it for more)
2 bags of frozen zoodles ( 4-5 zucchini for fresh)
1 frozen bag of small shrimp devined w/tails off
1bag of frozen raw scallops
1 small jar of alfredo sauce
Directions:
Thaw the shrimp & scallops separate according to package directions. Once thawed sauté in olive oil with salt or garlic salt & pepper to your liking according to package directions. When almost done start the frozen or fresh zoodles. Frozen cook & drain according to package directions. Fresh sauté in olive oil until soft. When everything is done mix together in another pan and add half the jar of alfredo or a bit more if you like alot of sauce and heat all together over medium heat while stirring occasionally. Cook until hot & bubbly. Serve with a side salad of your choice to keep it low carb or serve with some garlic bread if you’re not going for a low carb meal!
